DEPARTMENT OF NUTRITION AND DIETETICS

GOALS AND OBJECTIVES:

1. The certificate holder in nutrition and dietetics should be able to produce native and continental dishes using both local and imported food commodities.

2. Supervise restaurants and bar operation in hotels and other catering establishments.

3. Supervise appropriate department in large catering and hotel organization.

4. Manage medium size catering and hotel organization effectively.

5. Be employed in General Hospital, Teaching Hospitals, Local Government Councils, sport council

and be self-employed.

STRUCTURE OF THE PROGRAMME

The certificate in catering and food hygiene programme is structured to last for three years (6semesters). This incorporate three to four months of supervised industrial work experience (SIWES).

ENTRY REQUIREMENT:

The minimum entry requirement for the certificate in Nutrition and Dietetics programme is five(5)The Minimum entry into the National Diploma in Nutrition and Dietetics is O’Level paper with a pass in English lang., and Credit passes in Chemistry, Biology/Adric. Science and any two of Maths, Food and Nutrition, H/sci, Econs, Physics, Basic electricity, Basic Catering and food services, Bakery and confectioneries, Hotel and Catering Craft course (cookery) and Hotel and

Catering craft course ( food and drink services).Chemistry, Mathematics and English Language.

CURRICULUM:

The curriculum of nutrition and dietetics programme

consists of three main components.

a. General studies Education

b. Basic catering and food preparation

c. Bakery, food science, hygiene and service

d. Supervised Industrial Work experience Scheme (SIWES)

CURRICULM STRUCTURE:

The structure of the certificate programme consistsof six semester’s classroom,laboratory/kitchen and

seminar workshop activities in the school and a sem

ester of (3-4months) SIWES in each yearof the programme.

CONDITION FOR AWARD OF CERTIFICATE

Students who have successfully completed the programme shall be awarded certificate after passing

prescribed course work, Examination and supervisedindustrial work experience. The certificates will be issued by NATEB and WAHEB respectively.
